It's a Donut Day!



Alright how many of you have woken up and just craved donuts? Well today was one of those days for me! I could just taste that delicious soft chocolate cake donut with that creamy chocolate glaze on top. Unfortunately it's not just a quick run to the store for my household. So it was time to pull out one of our favorites. This is the recipe we run to when I'm craving chocolate cake donuts.


In a medium bowl whisk together flour, cocoa, baking soda and salt.


Then in a separate bowl whisk together melted butter, egg, brown sugar, granulated sugar, vanilla and buttermilk.


Then add the dry to the wet ingredients and whisk together. The batter should be thick.


Spray your donut pan and fill them about 3/4 of the way full. You can either spoon the batter into the donut pan or put the batter in a ziplock bag and cut off the bottom corner. Then pipe the batter into the donut pan. Then it's time to put it into the oven.


Once you pull them out of the oven let them sit in the pan for about 5 minutes. Then put them on a wire rack to help cool a little longer while you make the glaze.


Mix together powdered sugar, cocoa powder, vanilla and milk. If the glaze is too thick add a tablespoon at a time or if it is too runny add a little powdered sugar at a time until it is the consistency you desire.


Once you have the glaze the way you like it, dip the top of the donut into it and add sprinkles if desired. Allow time for the glaze to harden.





Chocolate Cake Donuts
Servings: 6 Donuts

Ingredients
For the Donuts
  • 3/4 cup all-purpose flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons melted butter (cooled to room temperature)
  • 1 egg
  • 1/4 cup packed brown sugar
  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons vanilla
  • 2/3 cup buttermilk or 1 teaspoon vinegar mixed with 2/3 cup milk
For the Glaze
  • 1 cup powdered sugar
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon vanilla
  • 3-4 tablespoons milk
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. 
  2. In medium bowl mix together flour, cocoa, baking soda and salt.
  3. In a separate bowl mix together melted butter, egg, brown sugar, granulated sugar, vanilla and buttermilk.
  4. Add the dry ingredients to the wet ingredients and mix. The batter should be thick.
  5. Spray donut pan and spoon batter into pan. Or pour batter into a ziplock bag, cut one of the bottom corners and pipe the batter into pan. Fill each donut spot about 3/4 of the way full.
  6. Put into oven to bake for 8-12 minutes. 
  7. Pull out of oven and let donuts cool for about 5 minutes in the pan. Remove from pan and set donuts on a cooling rack. While the are cooling, mix glaze together.
  8. For glaze mix together powdered sugar, cocoa powder, vanilla and milk. If the glaze is too thick add one tablespoon of milk at a time or if it's too runny add a little powdered sugar at a time until it is the consistency you desire. 
  9. Dip the tops of the donuts into the glaze and allow time to cool and have glaze harden. Top with sprinkles if you desire.
